Almond Butter Brownies
These have been my favorite brownies for several years now and they are always a big hit in my house. Wholesome ingredients, refined-sugar free, gluten-free, vegan friendly AND super easy to make.
Ingredients:
- 1 cup almond butter (unsalted)
- 1.5 tbsp. cacao powder
- 1 flax egg (2 tbsp. ground flaxseed + 3 tbsp. water & mix)
- 1/2 tsp. sea salt
- 1/2 tsp. baking soda
- 1/4 cup coconut sugar
- 1 tsp. vanilla extract
- 1/2 cup mega chocolate chunks (Enjoy Life brand)
Directions:
- Preheat the oven to 350 degrees F. Line an 8×8 or 8×6 baking dish with unbleached parchment paper.
- Mix all the ingredients in a bowl, folding in the chocolate chunks last.
- Add the batter to the baking dish and bake for about 25 mins., or until golden dark brown.
- Let the brownies cool for about 10 mins. before cutting and serving
