This spicy mango-tomato salsa is a great addition to taco night!

Spicy Mango-Tomato Salsa Recipe:

Ingredients:

  • 1 large ripe mango, peeled and diced
  • 1/2 medium red bell pepper, diced
  • 3-5 Roma tomatoes, diced
  • 1 lime, juiced
  • 1/2-1 medium red onion, diced
  • 1/2 small jalapeno (seeds removed), finely chopped
  • large bunch (1-2 handfuls) fresh cilantro, chopped
  • 1 tsp. extra virgin olive oil
  • 1/2 tsp. sea salt
  • pinch black pepper

Directions:

  1. Chop and add all ingredients into a large mixing bowl
  2. Add more lime and/or salt based on your preference
  3. Enjoy!

Notes:

This can be stored in a air-tight glass container in the refrigerator for up to 3 days.

Enjoy this salsa with your taco bowl or with gluten-free tortillas!
