Energy Snack Bites Recipe

With our overwhelming busy lives from work or being a new mom, these energy snack bites are for you. I often hear from many clients that they are just too busy to eat throughout the day and they grab a coffee to boost their energy, or they are constantly feeding their baby and forget that they also need fuel to keep going. 

These energy snack bites are quick to make, and they last a week in the refrigerator and even longer in the freezer, so a perfect thing to grab on the go.

They are loaded with wholesome nutrients – fiber, plant-based protein, antioxidants, omega-3s, and healthy fats.

And for you breastfeeding moms, these snack bites may help support a healthy milk supply.

Energy Snack Bites

Ingredients:

Makes about 25 snack bites.

  • 1 cup of nut butter (i.e. almond, peanut, cashew – your choice)
  • 1/2 cup raw, local honey
  • 2 cups organic oats
  • 1/4 cup chia seeds
  • 1/4 cup ground flax seeds
  • 2 tbsp. hemp seeds hulled
  • 1/4 cup cacao powder
  • 1 tsp. vanilla extract
  • 1 tsp. sea salt
  • 1/4 cup raw walnuts, chopped
  • 1/4 cup goji berries
  • 1/4 cup unsweetened shredded coconut flakes (for coating)

Directions:

  1. In a large bowl, mix the nut butter, honey, and vanilla extract until well combined
  2. Add the oats, chia seeds, ground flax, hemp seeds, cacao powder, and salt to the same bowl and mix well.
  3. Now add in the walnuts and goji berries and mix.
  4. Once all thoroughly mixed and combined, use a spoon (or melon baller) to scoop the dough and roll into 1-2 inch balls.
  5. Coconut flakes are optional. Pour the coconut flakes on a plate and roll the balls onto the coconut to stick and coat.
  6. Store in an airtight container in the refrigerator for 1-week or in the freezer for up to 3-months.
  7. Enjoy!
