My Favorite Cabbage Slaw
Cabbage slaw is my go-to dish during these hot summer Florida days – it’s light and refreshing, and an easy dish to put together.
Cabbage is part of the Brassica vegetable family. It is packed with nutrients such as fiber, vitamin C, vitamin K, folate, and manganese. It contains antioxidants that help reduce inflammation. With its fiber content, it can help keep the digestive system healthy and promote regular bowel movements.
Cabbage Slaw Recipe
Ingredients:
- About 1/2 or more of a medium sized green cabbage, sliced very finely
- Sometimes I like to add 1/2-1 cup purple cabbage too, sliced very finely (more colors, the better)
- 1 bell pepper (color of your choice), sliced finely
- 1 red onion, sliced finely
- 1 large handful cilantro, chopped
- juice of 1 lime
- 2 tbsp. olive oil
- 2 tsp. red wine vinegar
- 2 tsp. apple cider vinegar
- 1 tsp. balsamic
- Himalayan salt and pepper to taste
Directions:
- Add all the ingredients in a large bowl and mix well!
- Enjoy!
